Greek pasta salad recipe - #Vegan #WithoutFeta

There is no shortage of various kinds of the Greek pasta salad recipe online.  I don't promise to be a kitchen whizz, I'm just a mother who is always looking for ways to put a good plant-based meal on the table. I have made a basic Greek pasta salad before, but it was for a different crowd so it was accompanied by feta cheese.  This time I made it without the feta cheese to accommodate those who want to cut out all animal products from their diets.

As much as this is a salad, there is no reason why you cannot add it to your vegan dinner ideas as well. I always make it our main meal instead of a side dish.  It has all the necessary food groups that make up a balanced meal i.e carbohydrates, vegetables, protein, and fat.

It is easy to make, so let's get started:

I cook for a family of 5, so feel free to adjust the ingredients' quantities to suit your needs.

Ingredients for the Greek Pasta Salad Recipe

  1. 500g Pasta (any shape will do, but I used the Rotini - spiral-shaped)
  2. 2 cups cherry tomatoes (halved)
  3. 1 red onion (thinly sliced and separated)
  4. 1 cup of pitted olives (halved)
  5. 400g tinned chickpeas (drained)
  6. Greek salad dressing

Directions


1. First cook the pasta i.e bring 4 liters of water to a boil, then add the pasta.  Boil the pasta for approximately 8 minutes (until tender). Stir it occasionally to prevent it from sticking together. Once cooked, drain and rinse it, transfer it to a colander drainer/strainer to properly cool off, and drain the water.

2. Meanwhile (while the pasta is standing), in a separate bowl, add together the cherry tomatoes, red onion, pitted olives, and chickpeas and mix evenly.


3. Add the cooked pasta and mix thoroughly.
4. Chill in the refrigerator until ready to serve.
5. Drench your salad with the desired amount of salad dressing, and serve.

If you prefer a Greek pasta salad without olives, you can substitute them with 3-4 tablespoons of capers or get rid of them completely.  I personally love them so this is not a problem.
